On a more serious note; the American bison is already a well-known symbol of the USA. This would simply make it official, so I'm all for it.

Had a buffalo steak once on vacation (ie. bison, not spicy), and it's good--Milder than beef, when cooked the right way.

Thought the American Bison wasn't the same as the Prairie Buffalo, which was hunted to near extinction, while the Bison is still ranched across the country. (There used to be a bison ranch out our way, near the rural highways, and it was fun to see the buffalo roaming within sight of the strip malls.)
But yes, it's as symbolic as the bear is to Russia or the beaver and moose are to Canada.
