Hey, just a fun little topic because the question popped in my head.

What do most fans use to determine if someone is still new to anime, and are there other stages of Anime aside from New?

For me for instance I consider myself to be not really new, but I am not exactly venerated either. I only have about 50 different series under my belt over the course of the last 6-8 years.

< 5 series : completely new to anime as a whole
< 50 series: new to anime, though at least know what anime is.

at the other end of scale...
500+: anime veteran
1800+: anime god/goddess

That makes some pretty decent sense. I'm finding the biggest issues myself with watching more series is finding ones I am interested in, and even once I find ones I am into there is almost always the issue of finding a website to legally stream them. Even living in Canada there are quite a number of sites which don't work outside the USA and even more Anime where no company owns the streaming rights to, hell a few don't have the DvD rights either.

I think you can consider yourself a veteran when you fully understand what you find appealing and what kind of shows your gravitate too. So it's not so much the number of anime you've seen but how confidently you can share your point of view on anime that determines how new you are. Although I DO think you need to watch a lot of different kinds of anime to get to that point I'm just not sure what number that would be haha. That's what I look for anyway, I realize that a lot of people aren't good at expressing themselves but so long as your confident in yourself that's that's the most important thing.

Me? I consider myself to be a veteran.

I've got over 200 shows under my belt and while I certainly don't consider myself a newbie I don't really consider myself a veteran either. More like a rabid consumer

Hum, over a billion shows watched! So uber deity of anime? All knowing wonder kind? Grand master? Utter veteran? Master of anime? Learned one of anime knowledge?

Flip side, hey Sunday morning cartoons! What did I just wast? Huh? But oh wait did that just happen in a cartoon? Cool! Why are there words on the bottom of the page? Hey it's not in English! Subtitles or dub? What's a dub? Hey where are the subtitles? Raw what's that? Light novels lead to animes being made?

So...

You guys do realize that even watching 100 entire series is an absurd amount of anime, right?

100 isn't that much compared the amount of anime that some people on CR watch.

Yes, that's relative to CR. It's still, in absolute terms, an absurd amount for any person. I'm not moralizing it. I'm simply stating its A LOT. That 1800 mark, however, I would moralize... as legitimately insane

You're no longer new when you can easily recognize the genre and tropes in a new show without having to look them up.

I think that really does depend on how long one has been watching. 100 entire series over the course of, say, 10 years wouldn't be very absurd at all, while watching that same number in just a few months, yeah, probably.

There is no magic number.

It's in how you feel personally.

That's true. But to be honest, watching around 100 entire series is around like, the same amount as a person who watches like, TV Shows (like GoT or Breaking Bad). And, to those who have even watched 1000+ anime I would.. be kind of blown away.
