At the moment, ufotable's series, Fate/stay night: Unlimited Blade Works, is listed on Crunchyroll as Fate/stay night. I think the name should include Unlimited Blade Works in the title to avoid confusion with Deen's Fate/stay night anime.

Crunchy doesn't get to pick the English name they are called, they have to go by what the author wants them to be called. Here is a mostly relevant related question/answer from Answerman on animenewsnetwork:

This isn't a matter of translation though. It's matter of avoiding confusion of another studio's adaptation of the same source material. Crunchyroll is the only site I have seen where it's just called Fate/stay night. It's called Fate/stay night: Unlimited Blade Works on Netflix and Fate/stay night [Unlimited Blade Works] on Hulu, which is also the video source for Aniplex Channel, a site owned by the show's North American distributor. As such, I doubt that Aniplex forced Crunchyroll to call it just Fate/stay night.
