It's like one of the few types of pies you see sold by the slice at convenience stores, coffee shops and fast food restaurants. But slices of apple pie or specialty pies are relatively cheap. Why is there a view that cheesecake is an ultra indulgent dessert catered mainly to RayBan yuppies? It's made with common ingredients and is fairly simple to make.

Because its a luxury, luxury that have a lower demand in comparison to other products, also some cheesecake cafés use the price to cover the local in which people take a time to just dessert, similar to Starbucks

I recon if it's so simple to make, you can just make it yourself and cut out the middle man expenses.

It is not easy to make a good cheesecake; cheesecakes tend to have more parts and more ways to mess up. Regular cakes are easier to make, at least in my experience.

Where I live there a cafe that started off by just selling cheesecakes and it worked cause it got big, and their NY style is my favorite since they add just a little lemon to it.

What Xxanthar said. Most dairy products are more expensive to buy than the fruit that you use in regular pies, and the graham cracker crusts, whether you bye them pre-made or make them yourself, aren't cheap either. I really think that it comes down the number of ingredients too, because cheesecake uses more ingredients than regular pies and you actually need a lot of cream cheese to make them. One large tub of cream cheese usually only translates to one cheesecake, maybe one and a half, where if you have ten apples you can make at least two pies, maybe three, out of that. And good quality cream cheese, which you need to make a good quality cheesecake, is like $3.99 for a large tub of it around where I live, where you could get like a pound and a half or more of apples for the same price. And like auroraloose said, they aren't easy to make either. If you mess up slightly on an apple or other regular fruit pie, you can usually salvage it and still sell it, but not so much with cheesecake if you mess up.
So, it really comes down to cost of ingredients and time invested into making a good quality cheesecake versus a good quality fruit pie.
