meringues actually aren't very hard to make~ there's a way that makes the egg whites beat/whip up better =]

First- make sure it's ONLY egg whites you have. and the bowl you are using is clean of any oil! because any fat/oil will stop the protein in the egg white from "foaming"
2nd- add sugar once the egg white is beaten to soft peak (when it looks foamy..think of hair styling mousse)
3 - add a lil bit of water (water can make the volume bigger but too much will break down the egg white!)

(there's some other things like any kinda acid e.g. lemon juice. if u want to add it to ur egg whites...make sure it's only a lil bit and the egg whites should be at room temp.)

oh and best tip for making meringue is possibly use an electric beater XD doing it by hand whisking takes more time and is kinda physically demanding (but u feel more accomplished)

(when i find the lemon meringue pie recipe i had i'll post it here. dun worry it's easy! a bunch of yr 11 food technology students managed to make it in around an hr and a half. so it doesn't take much time either =])

DIRT

1 chilled chocolate cake (has to be the moist kind not the dry one)
8-10 chilled cups of chocolate pudding
1 can of whiped cream
chocolate syrup
ice cream: flavors may include chocolate or any flavor you like that has a brown or dark color that resembles dirt
a tin foil pan or rectangular container that is about a fourth bigger then the cake

1. cut the cake between the top and bottom of the cake.
2. take one half and place it in the container then add in 1/3 of your pudding cups along with as much whipped cream, ice cream, and sryup as u want.
3. mix it all together.
4. do the same thing with the second layer of cake on top of your first layer in the container.
5. add your finishing touches to the top of the cake. fruit can be added at this time.
6. chill the cake if its not cold.

this is gonna be one heck of a chocolately dessert. XD p.s. this is my friend's recipe.

Hmmm i learned something today so i might as well tell everyone. Hmm try to use more oil like olive oil? instead of butter. Butter might be really good but its pretty bad for the health. Butters will become fat in our body and its veryyyyyyyyyyy veryyyyyyyyy hard to get rid of it.

sometimes it is kinda essential to use butter but yes you are right~ if we can subsitute should use a oil or margarine (sp?) made from plants etc. butter is saturated fat while plant oils are unsaturated~ which are better for our body ^_^ (also be careful of transfat coz it becomes saturated fat in our body O_o)

add some butter to your macaronees or spaghetti when they are done,
it will make em more slippery so it will be easier to make the dishes then ^^

i found this recipe relatively easy to make~ and it tasted good! but it may be kinda hard for ppl who don't cook a lot~ but it's worth a try =]

degree of difficulty - moderate

Portugese custard tarts (i just found them tasting like custard tarts...coz the portugese ones i usually hav are kinda different XD )
Ingredients
4 egg yolks
1/2 cup (110g) caster sugar
2 Tablespoons cornflour
1 cup (250mL) cream
1/2 (125mL) water
strip of lemon rind
2 teaspoons vanilla essence (or use 1 vanilla bean as alternative. it smells and tastes more rich in vanilla!i personally like vanilla bean more)
1 sheet ready-rolled butter puff pastry

Method
1.Preheat oven to hot (around 180 degress celcius fan forced). grease a 12 hole 1/3 cup (80mL) muffin pan. place egg yolks, sugar and cornflour in medium saucepan. Whisk until combined. Gradually whisk in cream and water until smooth.
2.Add rind, stir over mediuim heat until mixture just comes to a boil (mixture will become thicker..don't let it boil for a long time..take it off heat as soon as it boils or else the cream will separate). Remove from heat immediately. Remove rind. stir in vanilla essence (if using vanilla bean. cut vanilla bean in half. and using a teaspoon scoop out the seeds and put into the saucepan mixture...mix until the seeds seem to be evenly distributed)
3. Cut pastry sheet in half. Remove plastic; stand pastry until thawed (around 5 min). sprinkle caster sugar on top of pastry sheet half and roll up tightly. cut logs into 1cm rounds (cut from "short" side)
4. Lay pastry, cut-side up, on lightly cloured board. roll each round out to around 10cm. Press rounds into prepared muffin pans with fingers. Spoon custard into pastry cases
5. bake tarts in oven for about 20min or until browned. (in some ovens it may not brown...so check on it~ the custard may bubble a bit) transfer to wire rack to cool.

u need to use japanese sushi rice..should be able to find them at the supermarket...hmm short grain rice =]
