Quail Stuffed with Risotto and Egg - Cheeky Youngster Style (Recipe?)

Feel free to come up with suggestions



Primary dish

1. Prepare the Risotto and finish it by adding some milk (for mildness).
2. Sauté ground chicken in butter; sweat the onions; add them to the Risotto.
3. Add salt and pepper to the eggs and poach them in the cream (?).
4. Parboil 1 or 2 cabbage leaves in salt water.
5. Place the Risotto-ground chicken on the leaf (wrap it in the leaf).
6. Place the poached eggs on the leaf, on top of the Risotto.
7. Sear the quail in oil.
8. Stuff the quail with the cabbage leaf.
9. Roast the quail in the oven (Crunchy surface and juicy underneath).


Madeira sauce by Yukihira

Heat sugar and honey until the mixture’s color is deep golden.
Mix Madeira wine, red wine, fond de veau, and soy sauce; simmer it down (the soy sauce brings the ingredients together).

Chef’s sauce by Master Shinomiya

Deglaze the pan with Sherry vinegar.
Add red wine.
Skim the foam.
