Pork buns, though I have only had good ones twice. Bought mini versions at an asian food store about 35 minutes away, and they were awful...But maybe I had something else....thought they were the same just smaller. Pork inside something similar to a dinner roll. Light and fluffy, not soggy.

Not sure if it is originally Japanese, Korean, or Hawaiian fusion, but Katsu chicken is the best! I jokingly call it Japanese style KFC.

It's really easy to make too. Just take some boneless chicken boobs, smash them flat with a meat mallet, dip in egg, then panko.

Then fry them in oil till cooked though, be careful, it cooks very fast. Cut into strips and serve on top of steamed rice or cabbage strips. (you need something to absorb the oil) Couple of notes.

1, it may be easy to make, but it's also easy to mess up. I've burned plenty by not watching for 60 seconds, and undercooked some too in paranoia of burning them.

2. its hella messy! Expect your hands to turn out like panko mittens, let alone the crackling oil, chicken juice from smashing it, etc.

3. between the breading, the frying, and washing your hands, it's very time consuming without a second pair of hands. if you got a cook buddy, it takes 15 minutes max to cook for 4.

4. you also serve it with some kind of katsu sauce, but I can never remember how to make that to save my life.

5. best side dishes are plain steamed white rice and fried bananas with cinnamon. Mac salad and other Hawaiian staples also work well too. (this is why I think it might be a Hawaiian fusion dish, just like spam musubi. <----- btw, that is also good too)

Oh, i can't believe I forgot this. Tako Poki. some kind of spicy octopus seafood salad. Very yummy, but it doesn't exist in this bleach white city I live in now. Don't see any octopus either, nor do I know how to make it. Plenty in Vegas, Hawaii, and probably lots of other places with actual diversity.

Tonkotsu ramen and aburaage
Takoyaki is delicious too, but it's something I enjoy sparingly

With some of the other foods I enjoy, it's really quite hard to say whether or not it's actually japanese since it's usually consumed by surrounding countries as well, albeit usually with a twist. Like different mochi preparations, different kinds of kinako sweets, and so on. To my knowledge, several different asian countries have different takes on pork kakuni.

Never tried one. Spring rolls is the closest but thats most likely eastern origin in general. Unless noodles which i am not fan of counts. Mostly due to the fact that the fat in it adds to your blood vein which isnt good for you.
