Why not luck or wishing good fortune, or "break a leg" or something similar like that? Or just "do your best!" reflecting on ones own ability or skill to bring them something that is desirable or fortunate.

Blessings are usually just expressions of good will that are commonly associated with religions. It's just another version of what you mentioned. There's no concrete need to say them and not the other things you've mentioned, but neither is there any necessity to say the other ones. Don't read to much into it. If you or anyone else have particular issues with religious connotations and whether or not a phrase sounds more religious than others, that's your personal hang-up. I'm an Atheist. All I hear are words that are commonly well-meaning. It's the thought that counts, and it takes a very bitter person to insistently pervert good intentions. Even if the blessings are entirely religious, it's still pretty shitty to make it some kind of life mission to pick apart religious leanings.

Here's a meaning from some old book:

Bless -> From the Greek word "εὐλογέω (eulogeō)", pronounced "yü-lo-ge'-ō".

A. to ask God's blessing on a thing

B. pray God to bless it to one's use

C. pronounce a consecratory blessing on
