I remember when my gf at the time, her sister had her kid and I'm pretty dark skinned myself and whenever I held him he started crying
He didn't cry for no one else

OT: maybe out of survival instinct. a loud noise could scare away potential threats, and of course a stranger is perceived by the baby as nothing but a threat to their safety.

I think that's really pretty dependent upon the baby, but in the general case it may just be discomfort and anxiety because the holder is unfamiliar.
