It depends on what the writers' goals are and how well they handle it.

I like it how they do it in anohana if they're going to have a lot of main characters, only portray background for the ones who have an interesting one. I hate animes that take the **** explaining each characters backstory like seriously I really didn't care that that person used to have a couple of friends who he went to the beach with every year and drifted apart into a different group jesus sometimes it annoys me sometimes it's good.

I think three main characters is enough, since you dont have to many or too few. A good example of three main characters is the anime Gintama, which revolvs around Sakata Gintoki, Kagura and Shinpachi Shimura. But it ultimately depends on what kind of anime it is, since over five main characters might be a good thing for longer type of anime so we get to know everyone without really rushing it, like shorter anime have to do.

It depends on the story and the writers. Baccano! was great with a lot of characters, but shows like Hamatora and Occultic;Nine seem to be a mess with a lot of characters. I think that Re:Zero is strongest with just Subaru being the main point of view character with a few side clips of other characters thrown in. It makes everything more mysterious and intense because he does not know what is going on unlike some other characters.
