One of these will be my first pet, probably by the end of the month. Which one should I get and why? I'm open to any advice.

Cat. Cats are cuddlier and less energetic, meaning they're easier to take care of and usually just cuter in general. Also I believe they live longer.

Ferrets literally stink. Get a cat, especially if it's a first pet. They are easy to take care of. Just make sure you don't have allergies to the fur or dander.

I work midnight to 8:00 a.m., so I'm home most of the daylight hours.

Well, to be honest ferrets are social creatures, if you don't have 2 than they'll be alone while you're at work.
They also like to hide in crevices, and shoes, etc. Very energetic animals as well and needs a lot of interactions.
The stink problem of ferrets is easily fixed, as if you buy them from Petco, the stink glands are already removed, and they've already had shots etc.

...Is it really assuming if you flat out have it in your name?

I've met quite a few people who I believe have stink glands.

What if I don't identify as a dog, but I identify as a doge?

My sister had a ferret once. Never again. Little shit kept me up all night with its screaming and during the day, biting non stop.
Thankfully the little crap died.
