If Haruhi is supposedly a god with all these powers, how come nothing happened until she met Kyon?

If you pay attention to the beginning of the first episode, Kyon actually says that although he didnt believe in them, he still wished aliens and espers existed. Soon after, he meets a girl who is looking for them too, and suddenly they all existed. i dont know, maybe it is a chicken or the egg situation.

I also like to subscribe to the "Kyon is the actual God" theory.

His opening monologue for the whole series that explains how he used to think when he was younger basically foretells everything that ends up happening. It's just that since he has become an older skeptical person he prefers to be the audience than then person pulling all the strings. Hence Haruhi.

Sadly I don't think we will ever get to find out the truth. Because I don't think the LN is going to come back.

I'm narrative fiction, there's a concept of a character knowingly or unknowingly having an ability or power that uses convenience to protect itself & the person who wields it. One of the most well known is Magician Bink from the Magic of Xanth series of high fantasy novels. His magical talent is that he cannot be harmed by any magical means. Seeing as how the land of Xanth is entirely based on magical means, not being able to be harmed by anything would make him nearly invincible. But, in in order to prevent itself from being discovered & circumvented, the magical talent always operates by subtly influencing events around to arrange for things to happen coincidentally or by accident, so as to prevent the method of how it operates from being discovered.

I also want to add my support to the "Kyon is God" theory.

He was a bored god who reincarnated himself as a human, only to realize that a normal human's life is pretty boring. So he began unconsciously channeling his powers through other people, namely Haruhi, in order to cause some excitement. In his opening monologue, he states that he'd prefer to be a sidekick rather than a hero, and in The Disappearance, admits to having fun with Haruhi and the Brigade.
