If it's a man I use sir and if it's a woman I use miss.

Yeah, I use both when talking to strangers. Though I say madam instead.

No, not here in Aus unless addressing a customer / client at work & I don't know them personally / don't know their name. However, never ma'am, it's not a term we really use here in Aus much, if at all.

If female tend to use Ma'am, if a male annoys me they also get called Ma'am. Those few seconds before they realize what just said is priceless .
