I recently subscribed to Crunchyroll because I felt bad fro using illegal sites for so long, but now that I'm here I've found that there's so little in terms of Anime. You guys don't even have Neon Genesis Evangelion, like come on it's a classic! How often are new/old shows added? Is there a way to request certain shows?

Anyway, this is a generic suggestion. I could just as easily say "Make CR Better", but in what way?

In any case legacy titles, especially high tiered ones like Evangelion, are hard to wrangle away from Funi. However, airing shows are added all the time, in many cases a bit of before or just before they air in Japan, with some focus on older titles. I wouldn't count on any well known older titles that have been claimed.

Most older titles of interest are currently already licensed in most major regions outside of Japan.

But generally older titles are much harder to license than new titles. This is because the rights situation is rather complicated for many of these titles. For example, you will have situations in which the Japanese rights owner does not exist any more in its original form, e.g. the company has closed down operations and only remains as an entity without staff you could talk to about licensing.
Or, the license is held by a publisher in your local market, but the license that publisher has is so old that it does not include a permission to stream the series, because internet streaming wasn't a thing when it was licensed originally. In those cases you really don't want to re-negotiate the deal to include streaming, as the Japanese license owner may ask for an update of the money terms, and as a pure disc publisher in these situations you're not going to spend money on additional rights which can only be used by a different company.

And this is just to name a few constellations that make it really hard to get your hands on old series.

Except for the rebuild movies (which Funimation doesn't stream, and probably can't secure streaming rights for), Funimation doesn't have a license for Evangelion. At this point, no one appears to have a license for the original series, and the buzz is that's because Japan isn't currently interested in licensing it. It seems to be in temporary stasis the way the original Sailor Moon series was for many years.
