I've been really confused, So we leave of the second season with Ciel becoming a demon, leaving his servants at the mansion and telling everyone associated with them that he is gone. But then we have a third season, and it's like none of that ever happened! And then there's Book of Murder, and even then this info is disregarded. And now we have Book of Atlantis coming soon. If anyone can explain why this is happening, I'd be grateful. Plus, feel free to post your own Black Butler Questions.

I wouldn't think of book of circus as a third season. The first two seasons are anime original past the jack the ripper arc (I don't know the exact point). The book of circus picks up directly after the jack the ripper arc and follows the manga instead. That means that most of the first two seasons you are talking about pretty much never happened. They did something similar with Blue Exorcist Kyoto Saga. I hope that helps you.

The Curry Arc is the last cannon worthy thing I have seen. Not sure about the doll guy. Doesn't seem too important. Everything to do with Ash Landers is anime original.

In the anime, episode one is semi-canon. Episodes 2-6 adapt the manga Jack the Ripper arc. Episodes 7-12 are anime original. Episodes 13-15 adapt the manga Curry arc. All other episodes in season 1 and 2 are entirely anime original.

Book of Circus, Book of Murder and Book of Atlantic ignore the anime original material from the previous anime series and go back to accurately adapting the manga. Book of Circus picks up right after the Curry arc (episodes 13-15).

If you enjoy the anime, I highly recommend reading the manga.
