Carrot Cake

400g flour
360g sugar
6 eggs
about 2 ½ cups of vegetable oil (save some for greasing)
3 large grated carrots
2 teaspoons of cinnamon
2 teaspoons of baking powder
2 teaspoons of vanillin sugar (if u have it)

icing:

200g soft italian cheese (philadelphia, mascarpone or similar, same as u use for cheesecake)
about 3 cups of icing sugar
cest of 1 orange (for decoration)

preheat oven 175C or 350F
Whisk eggs and sugar with an electrical whisk(use a plastic bowl) for a minute then add the oil. Mix all the dry stuff in another bowl and add to the batter and mix, add carrots and mix. Grease an oven pan and pour the batter in. Leave in the oven for about 30 min.

Let the cake cool the whisk the cheese with the icing sugar (start with a bit less than 3 cups I don't know exactly how much I use) with the electrical whisk. Spread it on the cake and sprinkle over orange cest. DONE!!!

Ice Heart

you need:
2 cups of sorbet ice/ ice cream sode with wilde fruits taste (500 ml)
1 big cake (400 gram) cut into small pieces
100 gram of raspberries

other things:
a heart shaped bake form about 10 cm big other shapes are also good but heart formed is cute

preparing:

take the ice cream out of the fridge and lit it melt for 5 min so it gets a bit softer
lay the bake form on a board, full the bake form with some cake, just cut some piece of the cake so it fits exactly in the bake form.
then take some ice cream and spread it on the cake.
remove carfully the cake form. and you can start all over again untill you have like 4 hearts.

put them in the fridge i don't know exactly how long but untill they are a bit frozen, and put some raspberries on it.

umm u prefer any kind of flavour or type?

shortbread is one that i find easy and tastes good~~ good gift for friends too =]

this site has recipes for different kinds of shortbread including the classic recipe~~ =]

FUDGE ECSTASIES
These cookies are like brownies with a surface that should be crackly, but the inside soft, fudgy, and nutty.

One 12-ounce package (2 cups) semi-sweet chocolate pieces
2 squares (2 ounces) unsweetened chocolate
2 Tablespoons butter or margarine
1/4 cup all-purpose flour
1/4 teaspoon baking powder
2 eggs
2/3 cup sugar
1 teaspoon vanilla
1 cup chopped walnuts (optional)


Heat oven to 350ªF. In heavy medium-sized saucepan, heat one cup of semi-sweet chocolate pieces, all of unsweetened chocolate, and butter over low heat, stirring constantly (or use a double boiler). Transfer the chocolate to a large mixing bowl; cool slightly.

Stir together the flour, baking powder, and a dash of salt. Add the eggs, sugar and vanilla to the chocolate mixture and beat well. Add the flour mixture to the bowl and beat until it is well-mixed. Stir in the remaining chocolate pieces and nuts.

Drop off heaping teaspoons full onto a lightly greased cookie sheet. Bake at 350ªF for 8 to 10 minutes or until the edges are firm, the surface dull and cracked. Cool for one minute on the cookie sheet; remove and cool thoroughly. Makes: about 3 dozen.

I made these with my friends and one of their sisters. You can add others in it instead of just chocolate chips or nuts. We didn't add in the nuts because one of my friends has a deadly allergy to nuts. We put in raspberries though =) It would've worked out even better if the raspberries were sweeter. Oh well. This recipe is really easy though. We added in more flour because it seemed too liquidy for a batter. But you don't need to do that if you don't want to.

Another thing: We just used 1/4 cup of extra chocolate chips to replace the 2 squares of unsweetened chocolate since we didn't have any. It worked out just as good. We also stirred in white chocolate chips in the batter =)
