Well for animation I'd say something from Ghibli like Princess Mononoke or Spirited Away - as they create these worlds that just make up their own rules and expect you to follow along.
Live action maybe something in black and white like the original Godzilla, Citizen Kane, or Psycho. Black and white movies take a lot of very specific lighting to set the scene since they can't rely on color - so it'd be a good film technique to see in action for someone wanting to know anything about films.

Schindler's List is also an impressive movie and very well-shot

Ooo, I like this question

If I had to choose a favorite, I would probably say Citizen Kane, but for someone who's never seen cinema, I'd say Disney.

Someone who's never even heard of the concept of a film before, eh? Depends on my mood. If I want to be good I'll show them something iconic but still accessible, like a film of people performing a stage play. Maybe A Midsummer Night's Dream. If I want to be bad, I'll show them the raunchiest, most disturbing hentai I can find and pretend that it's something people watch every day with dinner.

I would be a very dangerous time traveler.

I don't know about "all film", but that's THE first movie you show to someone who's never seen Foreign films before.
