Eureka Seven is one of my favorites, check out Gurren Lagann, if you haven't already. Gainax makes great shows!!

Evangelion is why I love Psychological anime.

Ergo Proxy is why I love Sci-Fi, Serial Experiments Lain is another Sci Fi anime that is mind boggling and dope. (Steins Gate?)

Monster made me love mystery. (This one is psychological too)

Toradora & Oregairu made me love Rom Coms. (Well those are the only ones I love, but it warmed up my opinion on Rom Coms).

My roots go further back to cinema, namely film noir from the '30's thru '60's not excluding well-directed morality / twist of fate stories: Bad Day at Black Rock (1955), Rebel Without a Cause (1955), Out of the Past (1947), 49th Parallel (1941), North by Northwest (1959), The Treasure of Sierra Madre (1948) et al. Actually, a person could open up the Criterion Collection or works preserved by Janus Films and spend the remainder of their lifespan cognitively entertained. Soooooo, how did anime enter the picture in my head?

Credit goes to Godzilla aka Gojira (circa 1954-1955): I was 7 years old at the time, talked my mother into taking me to the movies. Scary show, gave me nightmares for awhile; Japanese influence since childhood.

Anime: Cowboy Bebop: homage to film noir with jazz affectations. I've always liked jazz. Credit Yoko Kanno for making anime watching more than a passing fancy once the series ended.

Evangelion: coming to terms with the analytical content added value to my grad studies in college re abnormal psychology, childhood development, guidance & counseling; good show examining the family and work dynamic when placed under stress.

Edited because I misunderstood the question.

DBZ for shounen action. This is pretty obvious though. I'm pretty critical of the genre nowadays, though I still enjoy it.

Gundam Wing made me fall in love with mecha. I was too young to understand much other than giant robots look cool though, and all of the political stuff passed over my head. I have a huge bias towards mecha, to the point that I may watch through even a bad or mediocre show as long as the mech looks cool.

The nonedited version of Cardcaptor Sakura got me into the magical girl genre. I am a significantly bigger fan towards the mecha girl genre (think Symphogear), but I can definitely still enjoy a good magical girl show.

Daa Daa Daa exposed me to shoujo romance. It's just so adorable and funny. I'm not the biggest shoujo fan, but I read shoujo manga semiregularly still.

GTO exposed me to the seinen genre in general. It's probably my favorite genre overall all things considered.

Zero no Tsukaima is the reason why I have a significant amount of bias for isekai shows and let me tolerate some of the more annoying tropes the genre has like the harem and OP self insert protagonist. I honestly can't recommend that show to someone else because of the problems it does have, but I enjoy rewatching it occasionally because of my nostalgia.
