Sakura throws down with Ino, in a female Jutsu fight to the end (Naruto s2e41-42)
With the help of Granny Chiyo, she takes on and defeats the Akatsuki's own: Sasori (Naruto Shippuden e19-27)
Sakura vs. Karenbana (Naruto movie 3)
With her hair grabbed by Kin, Sakura flashes back to how weak she was at missons and how everybody had to protect her; and then in one swift motion slices off her hair and rises to fight (Naruto s2e32)

Yes, I agree. Sakura needs more screentime. I think Sakura has the most character development out of anyone from the show though... She really has changed a lot from when she was a genin.
