if hino matsuri is smart enough, this should be a resounding YES! If she keeps up with the anime, she'll get loads of moolah from the sponsors, and I'm pretty sure that once they release Vampire Knight merchandise, people are going to really hound the products, which means more $$$!

I don't think so, because it looks like they're about to have the 'final battle' in Vampire Knight Guilty now.. The first season finished like it didn't really ended yet, but if this season ends with a 'final battle' like that, I wonder what a third season can possibly be about .
I do hope there will be one though, but I'm just being realistic on it .

Erm alright... Allow me to add my 5 cents to this.
The most logical answer is NO.
My reasons? Simple and complex. The simple end of it is that most popular shows now or days only see two seasons unless it's an already long and ongoing manga, or a swiftly published manga. Most every anime show made that has a monthly release only has two seasons. The reason for that is the more complex end.
The problem with making an anime so close to the release of a new manga is this: They will eventually catch up with one another. When an anime show comes on every week and a manga chapter comes out every month this is bound to happen. Then the anime has to get creative and start making up their own ending for the season, like in the case of Fruits Basket or Ouran Kou Kou Host Club. Now, shows like Tsubassa have seen more than two seasons but the anime still cuts short of where the manga currently is. Tsubassa comes out more frequently.
Bottom line is this. I wouldn't get my hopes up. If there were to be more Vampire Knight they would either have to:
a.) Create a separate cannon for the anime.
b.) wait for more chapters of the manga to come out. And even then they'd have to wait several months to get enough material to do a whole 13 episodes worth.
So I hate to be the pessimist but the answer is clear as day. No matter how much you want there to be more, the chances are low. And if they do make more the chances are they won't be as good because the story won't be the original creator's story.
Animes now or days are meant to be more of a supplement to the manga. Sort of advertisement for the manga.
