I've always wondered why they never took the armor of dead iron army soldiers and used it to sneak into places? Plus the iron armor more sturdy and can help them better.

During those times... wood comes easier and paper is harder to get, thus paper is used by the nobility to send messages over the wood scrolls. If you haven't noticed that wood scrolls would be sent by spies and the paper is sent by nobility
