Slice of life is definitely not boring, but i can understand why people think so, if you want some good slice of life anime i can recommend,

Yuru Camp, Tanaka Kun is Always Listless, Disastrous Life of Saiki.K, Just Because!, Barakamon, 3 gatsu no lion, Great Teacher Onizuka, Watamote, Hyouka, Mushi-shi, Natsume Yuujinchou, Usagi Drop, Tonari no Seki-kun: The Master of Killing Time, Blue spring ride, Orange, Say "i love you", Toradora, Anohana, The Pet Girl of Sakurasou, Mob Psycho 100, Daily Lives of High School Boys, Tada kun never falls in love, The Devil is a part timer, tsuki ga kirei, nichijou and a whole lot more.

The reason i like the genre is because there are so many interesting ways the same genre can be made different.

i love the comedy, the romance, the sadness all the emotions you can think of and slice of life anime has that for you.

A lot of pure SoL anime like Non Non Biyori and Laid back Camp are adapted from seinen manga. Being a working adult, I understand why they target such audience. I like SoLs because they are calm and soothing, and I will watch all of them each season.

I suspect most, if not all, of those that say its boring have a specific subsection of SoL in mind.
They probably watch SoL but don't class it as such, if you aren't interested in subject it won't matter what genre it is.
Look through the list here at SoL, including the synopsis, and I'm sure you will find something worth watching.
SoL is such a wide genre that a lot of people don't even realise they are watching.

hafizarifff I found The Devil is a Part-Timer and Kokoro Connect being pretty dull.

Devil I wouldn't consider slice of life. More a parody of slice of life, with characters from an isekai harem anime.

And lots of people found Kokoro Connect less than amazing.

If by SoL genre you mean a show "about nothing", I think Seinfeld already definitively answered the question.

A show need not have an overlying plot or narrative and can still be engaging in episodic format. How well the characters are developed with their individual quirks and thoughts will largely decide how boring it is. With the right cast of characters, acting, directing, and individual episode plot, one can make a truly engaging show.

For an example in anime, Non Non Biyori comes to mind. There is no overarching plot line, we are simply following the characters about their day. Yet, they make the most mundane things seem exciting. I never would have thought I'd find some game with a ruler, paper, and a desk interesting TV but did they ever make that work. The framing, the imagery, and so on all also work in concert with the cast to give a great performance.

So, as a genre, no, SoL is not boring. There are simply boring shows, which can be of any genre.

SoL is not boring, maybe its not your thing.

It just comes down to how it's made from start to finish - if done well, it can be incredibly refreshing and fun to watch, however that can be said for any show of all mediums. It's an interesting question but I think in the end, it all comes down to personal preferences.

Also, SoL is a MASSIVE genre, maybe there is just something you don't like about it, or something that is associated with it (art style. voices etc) that puts you off.

Every 9 out of 10 doctors recommend 2 to 3 slice of life anime per season. It's good for your health.

I find that SoL entertainment is purely about the characters. As an example one of my favorite SoL shows is
http://www.crunchyroll.com/is-the-order-a-rabbit
I guess there's 2 parts to that; the character personalities and the voice acting, both of which can ruin a perfectly good series. I'm trying to think of a show that's only enjoyable with a sub and not dub, or backwards, but nothing comes to mind atm. I thought it was common knowledge that all SoL shows have a weak plot?

For some reason even though I'm totally into SoL shows I dropped some great ones like K-On!, Non Non Biyori, Working, and even Haruhi at first. If the characters don't click it's just not fun.

Slice of Life really has everything to do with how you are feeling when you get into it.
Now of course, the genre isn't necessarily confined to just one type any more, so I've got a list for you of anime that might have been mentioned already, or might not have been, either way, these three are a decent start for the genre:

1. K-ON!

A primarily music focused anime that has beautiful animation and very entertaining jokes, it's main strengths will lie in how much you enjoy music and/or just cute girls doing cute things.
I cannot stress enough that out of all of these, this one is probably my favorite of the bunch.

2. Hanagai

This is much more traditional, focusing heavily on high school through the eyes of people who aren't the most socially adept, it offers great fun, though I must warn it gets kind of lewd at times.
What makes this one so fun is that it's just watching a bunch of people goof around, it's almost relaxing in the way that the anime goes about showing us the lives of the characters.

3. Scum's Wish

Some might argue that this is more of a drama than it is a "Slice of Life" but it basically falls into the same categories, featuring a pretty realistic look into the relationships of its characters, where they all act about as intelligent as a teenager in their situation likely would.
Of course with this one, it's also a lot darker, so if you want a "dark" Slice of Life, this one is a great one to go with.

--------------------------------------------------------------------------------------------------------------------------------------------------------------------------

What makes the Slice of Life genre fun for me is that it mirrors a sort of reality to laugh at. While not always the case, many shows in the genre fall under being comedies, with the antics of every day life being the basis for what the comedy revolves around.
I've found that it always helps to be in the mood for something both realistic, and funny, when going into most Slice of Life shows.

As for them being boring, I'd wager that life itself can be kind of boring, so perhaps it's a mirror on life? (Deep I know.)

I guess it's nice to have low stakes. I'm not interested in watching 5 or even 2 stories about defending the earth from whatever evil. Or massive drama and trauma. Real life is pretty messed up as it is, it's nice to have a break.

I generally don't like slice-of-life anime because the sorts of characters I like are rarely found in them - magnificent, elegant, royal types.

However?

Certain idol anime do these types of characters way better than any fantasy shows do. (specifically, TsukiPro)

Also, StarMyu just has amazing writing, and character writing, and I love musicals, so...

Also, like... it depends on how you define slice-of-life.

Like... is slice-of-life anything that isn't fantasy, or does it have to be primarily concerned with the characters' relationships?

the non-fantasy shows I like are the ones that are primarily concerned with the characters' work - music/acting, as it happens, in all the ones that I happen to like.

But like, professional actors aren't exactly ordinary people. It's not like it's a story about a family and one of them just happens to be famous - it's about their lives and work in the entertainment industry.

What about detective shows, or shows about the work of high-level scientists - are those slice-of-life, or something else?

I tend to find many sports anime boring, unless they have something more than just super serious sports to bring to the table. It's all just about taste.
