Dinner for under $10.00

Brie-and-Vegetable Panini
for 4

The Receipt:

Sweet potato $0.74
Zucchini $0.74
Extra Virgin Olive Oil $0.50
Ciabatta Bread $2.99
Dijon Mustard $0.26
Brie cheese $2.64
Sweet onion $0.45
Arugula $1.49

Total $9.81 = $2.45 per person

The Recipe:

Preheat over to 400F
On a parchment lined baking sheet toss sweet potato (thinly sliced)
and zucchini (sliced the long way) with 3 Tbls of the Olive oil, season with salt. bake until crisp/tender about 20 min.

Preheat panini press (or 2 heavy pans) brush with oil. Spread mustard on the bread bottom halves.
layer with brie, onion, arugala, sweet potato and zucchini. Set the tops in place and grill/press till toasted.

I thought it was delicious but the Dijon mustard was overpowering to the vegies and Brie. Maybe a thin layer of mayo instead?

Wow, it made me drool. For you who thinks brie was too expensive and want to cut down on the fat and cost, just use a thin layer of low fat cheese instead.

I will try to hunt the cost for the latest cooking show recipe I tried to made.

looks amazing... i want to try and make a panini sandwich.. i have never had one... hmmm looks great and is cost efficient... i am eager to see what happesn next with this forum post!

recession can be such a scary word. Lets just remember the term "to draw back" or a "temporary break"
This will end up a global recession starting in the UK and hitting Spoiled Americans hardest...I CAN say that because I am one!lol

My recipe is for survival. We need to GET ARMED if your not and stock up on ammo for your firearm. Rub mud all over body and stay downwind from target be silent. shoot you a deer elk or whatever. FIELD DRESS right there dont wait and dont do it at your campground because you will draw bears and wolves.
