Every person defines 'Anime' in a different way. Sometimes it differs from the literal definition. What do you define 'Anime' as?

Anything... animated... in... Japan?

I'm pretty sure any other definition is categorically incorrect. Although in honor of this thread I'm going to call tomatoes peaches for the rest of the day. Because that just occurred to me and it sounds like it should be amusing.

Anime is animation that is created in Japan. By created I mean the writers/directors/producers are from Japan not necessarily that it was fully animated in Japan.

You should boldly state that tomatoes are vegetables (they're fruit)

Though...90% of people would argue that they aren't fruit...

call tomatoes, potatoes. and call ketchup, potato sauce.
