Why do we overanalyse some anime and just accept others as is?

I am surprised no brought up the most overanalysed show in the history of anime. I am talking about NGE there are more theorys about this show floating around then the rest of anime combined

Because some anime don't match those people's preferences. They bash them to show that they have better tastes.

I rarely see people attacking One Piece's story in depth like they have Attack on Titan. Usually its just the most basic shit you'd see fanboys who wack off to one of the other Big 3 rave about (I.e its too long, this fight wasn't cool, the characters are annoying and look funny ect). When I say blast I mean meticulously analyzing the show for its story faults.

They do talk about them but its never at the forefront of any real discussion.

I'll answer the original question again then.

When an anime (like AoT) is so well received, people will expect it to be good (if not in all aspect, at least most aspects), but if it turns out to be mediocre in a lot of aspects, people will rip it to shreds.

You rarely see someone giving negative criticism to something like "Spirited Away", why? Because this anime lived up its reputation of being a good anime.

It's quite simple. There are always Animes that get hyped up to the point of saturation (AOT, SAO) and then people expect too much from them. Thus, it leads to over - critique. If you can ignore the hype and take it for what it is, then you're fine.
