Never had this pop up before, so kinda curious about something. I have accounts on multiple anime streaming sites. One I used a ton before signing up for Crunchyroll had Food Wars on it. I watched through it around 3 times. I am going for number 4 on Crunchyroll and I find the subbing is different. Also a lot of explanatory text is not there. It is actually hurting my enjoyment of the show. Why are there 2 completely different subs for this show, and which one is on the actual dvd / blu-ray version of this?

Because the ones using the Blu-Rays are fansubs, and Crunchyroll does officialsubs.

Anime is in an odd spot, where the less-than-legal product that is fanmade and free tends to be the higher quality option than the official options. Fansubbers have a better player to work with along with less time constraints, which means that they can do a lot more with subs that Crunchyroll can't.

I wouldn't call fan subs higher quality; they are just an alternative translation. Official translations tend to choose words and terminology that they think will be understood by the majority of their target market. Fan translations will often include slang or only partially translate terms that they think western anime viewers should know/learn.

Playback quality will also depend on the source material and the quality of the fan subber's systems/software. If they own professional quality systems and have access to the raw HD version then they can produce something on the same level as a professional studio. If they can only access a bootleg DVD and have basic video editing software then that will show itself.
